Cooking Demonstrations

The cooking demonstrations at Ottawa Veg Fest are very popular, so come early to get a seat.  Our featured chefs come from some of Ottawa’s best restaurants and bakeries, and this year we have guest chefs from Vancouver and Colorado. The schedule of Cooking Demonstrations is shown below along with details about the demonstrations and chefs.

Special thanks to volunteers from the National Capital Vegetarian Association for their coordination of the cooking demonstrations.

Hummus is a Food Group

Chef Omer Abdallah
Chick Peas (Ottawa Trainyards)

Hummus is a food group. It is, right?! Learn how to boil and peel (yes, peel) chickpeas to make a creamy hummus. Watch Omer make fresh tahini paste from scratch by roasting and blending sesame seeds which he’ll transform into a tahini sauce – a versatile dip that can be used in or alongside many dishes.

About the Chef:
After a six-month stint in Lyon, France, followed by much time spent in Lebanon learning how to prepare chickpeas and chickpea dishes from scratch, Omer Abdallah realized we have it all wrong in North America where our food is canned, frozen, and preserved – and flavour is lost in the process. Upon his return to Ottawa, Omer left marketing and – with the help of his dad and brother – opened Chickpeas at the OttawaTrainyards: Ottawa’s only kitchen that uses 100% organic chickpeas in his traditional recipes with a modern twist.

Vegan Cheese!
Learn to make two healthy, raw fondues

Lynda Turner
Fauxmagerie Zengarry:

Think dairy cheese fondue can’t be as delicious as its dairy alternative? Think again! We’ll be making a traditional Swiss-style cheese fondue (using Zengarry, of course) as well as a Mexican cheese fondue for those days when you’re craving spicy! These simple recipes are suitable for any occasion and will have you ready to fondue like a boss in no time!

About the Chef:
As a vegan biologist with a passion for cheese, Lynda was unimpressed by the ingredients and taste of vegan cheeses on the market. Zengarry fauxmages were created to offer healthier, higher-quality options.

Lynda passionately believes that a vegan lifestyle is healthier for human health, for the animals and for the planet, and that providing satisfying alternatives to well-loved foods like baked brie, mac & cheese and pizza is paramount in convincing people that a vegan lifestyle is achievable and sustainable.  She’s intent on proving that a life without dairy is easier and more delicious than you think!
